Finding a delicious healthy snack can be difficult on a low budget. These homemade bites are a great place to start making a cheap alternative. Use these bites to satisfy your sweet tooth, while using raw and natural ingredients!
You will need:
200g soft Medjool dates (stones removed)
215g cashew nuts
1 tablespoon of cacao powder (optional)
Use a blender or food processer to blitz the cashews into a fine powder (or you can blitz less for a bit more of a crunch).
Add the dates and pulse until smooth.
At this point you can add cacao powder to give a chocolatey hint to your cookie bites.
Roll the mixture in your hands to form small balls and place on a plate or tray.
For best results, refrigerate for at least 30 mins.
Store in an airtight container lined with greaseproof paper for up to one week.
